Raw Material Information: U.S. farm raised, grain fed channel catfish (Ictalurus punctatus). Raw material shall not exceed 48 hours of age from kill to freezing, and be held at temperatures not to exceed 40°F. All products shall possess good flavor and odor as per 50CFR 267.104(c), and be free from off odors and off flavors. Strips are created by mechanically cutting the shank fillets into 1.3



to 1.7 oz strips and then mechanically breading them. Par-fried in Soybean or Canola oil.



VI Defect Criteria: Product shall meet or exceed standards set forth in 50CFR 267.104(d). Defect points shall not exceed 15 per sample.
